Buffalo Steaks with Grilled Mushroom and Garlic Gravy BBQ Recipe
Buffalo is a wonderfully flavourful, lower-fat alternative to beef. Searing these steaks directly over a hot fire keeps them tender and moist.
For the steaks:
4 teaspoons soy sauce
2 teaspoons peanut oil
1 teaspoon freshly ground pepper
1 teaspoon cardamom
1/2 teaspoon onion powder
1/2 teaspoon paprika
4 buffalo strip steaks, about 10 ounces each
To make the steaks: Combine all ingredients except steaks. Rub on both sides of the steaks, cover, and refrigerate for 2 to 4 hours.
For the gravy:
2 Portobello mushrooms, about 3 ounces each
4 tablespoons extra virgin olive oil, divided
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon salt, divided
2 tablespoons minced onion
6 to 8 cloves garlic, minced
1/8 teaspoon freshly ground pepper
1/2 cup red wine
1-1/2 cups brown gravy
Meanwhile, prepare the gravy: Rub the Portobello mushrooms with 2 tablespoons of the olive oil, lemon-pepper seasoning, and 1/4 teaspoon of the salt. Grill the mushroom for 8-10 minutes over direct medium heat. Remove from grill, cut into small dice, and set aside.
Sauté the minced onion and garlic in the remaining 2 tablespoons of the oil for 1 to 2 minutes; add the wine and reduce until wine is gone. Add the brown gravy and reserved mushroom. Stir to blend; simmer for 15 minutes, stirring occasionally.
For gas grills, increase heat to High. Grill steaks over Direct High heat for 8 to 12 minutes, turning once halfway through grilling time, or until desired doneness.
Makes 4 servings.

Phil on…seafood
Frozen, then defrosted fish does tend to become mushy when cooked. A light marinade of soy, lime juice and olive oil can sometimes help, but try to use very fresh fish, or at least fish defrosted and used straight away. Cook prawns in their shells, then remove it afterwards.
Phil on…BBQ smoking
If you’re using wood chips to smoke on your gas barbecue, the best thing to do is to soak the chips in beer, wine, cider or water for around an hour prior to cooking. This helps to cause smoke and makes the chips really smoulder. Regarding how many to put in, simply fill your smoker box – replenishing once they have cooked down – possibly every hour!

Try to pat dry all meats and fish with kitchen towel before cooking, or you can even dust with a little flour or semolina. Make sure your barbecue is really hot and don’t be in a hurry to try to move the food before it has sealed or browned. I never clean my barbie until the next time I fire it up, when I leave it for 10 minutes on full blast with the lid down….. then brush of the carbonized bits, hey presto!

A great trick for adding a naturally meaty taste to steaks is to make a meat stock and reduce it down to a thick, sticky syrup before liberally brushing on to the meat whilst cooking. Also, as I say to everyone – Rest Rest Rest meat before you serve! It really does make a huge difference to flavour. Try wrapping steaks lightly in foil prior to serving, it helps retain the juices and therefore the flavour.

Preparation time: about 20 to 30 minutes + marinate any 600 g lamb or 2 / 3 beef and 1 / 3 ground pork 2 shallots, finely chopped 2 tbsp. parsley, finely chopped 1 / 2 tbsp. mint, finely chopped 3 tsp. Curry powder 1 / 2 tsp. cumin salt and pepper 24 cherry tomatoes
Cook ground beef skewers with tomato Turkish
Mix the mince with all the ingredients except the tomatoes. Shape the mixture of 15 oval ‘balls’ Thread the meat, alternating with the cherry tomatoes on skewers. Grill the skewers for about 10 minutes on all sides cooked on the barbecue or under a hot grill.
Variation:
Replace the ground beef tartare through, but only or the time to grill, about 4-5 minutes is sufficient.
Provencal spears
For 8 skewers
Preparation time: about 20 to 30 minutes + marinate any
600 g lean roast beef or lamb
5 tablespoons. olive oil
2-3 cloves garlic, finely chopped
1 tbsp. Rosemary, fresh
1 tbsp. thyme leaves, fresh
2 red peppers
2 green peppers
1 zucchini
Provencal cooking skewers
Cut the meat into cubes of approximately 3 x 3 cm. Mix the oil with the garlic, rosemary and thyme and marinate the meat about 2 hours. Cut the peppers and zucchini into pieces. Thread the meat, alternating with pieces of pepper and zucchini to the skewers and roast them in 6-10 minutes on the barbecue or under a hot grill. Brush the meat and vegetables with the marinade interim.
