Buffalo Steaks with Grilled Mushroom and Garlic Gravy BBQ Recipe

Buffalo is a wonderfully flavourful, lower-fat alternative to beef. Searing these steaks directly over a hot fire keeps them tender and moist.

For the steaks:

4 teaspoons soy sauce
2 teaspoons peanut oil
1 teaspoon freshly ground pepper
1 teaspoon cardamom
1/2 teaspoon onion powder
1/2 teaspoon paprika
4 buffalo strip steaks, about 10 ounces each

To make the steaks: Combine all ingredients except steaks. Rub on both sides of the steaks, cover, and refrigerate for 2 to 4 hours.

For the gravy:

2 Portobello mushrooms, about 3 ounces each
4 tablespoons extra virgin olive oil, divided
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon salt, divided
2 tablespoons minced onion
6 to 8 cloves garlic, minced
1/8 teaspoon freshly ground pepper
1/2 cup red wine
1-1/2 cups brown gravy
Meanwhile, prepare the gravy: Rub the Portobello mushrooms with 2 tablespoons of the olive oil, lemon-pepper seasoning, and 1/4 teaspoon of the salt. Grill the mushroom for 8-10 minutes over direct medium heat. Remove from grill, cut into small dice, and set aside.

Sauté the minced onion and garlic in the remaining 2 tablespoons of the oil for 1 to 2 minutes; add the wine and reduce until wine is gone. Add the brown gravy and reserved mushroom. Stir to blend; simmer for 15 minutes, stirring occasionally.

For gas grills, increase heat to High. Grill steaks over Direct High heat for 8 to 12 minutes, turning once halfway through grilling time, or until desired doneness.

Makes 4 servings.

Chargrilled T-bone Steak with Chimi Churri Sauce

Two 11/2lb (750g) t-bone or porterhouse steaks, 1in (2.5cm) thick
1 tbsp olive oil
1 tsp black pepper
salt
1 recipe chimi churri sauce (see Sauces)

Drizzle steaks with oil. Sprinkle with pepper. Grill according to instructions below. Sprinkle with salt. Leave to rest for 5 minutes. To serve, cut around the bone to release the meat. Cut the meat across into 1/4in (5mm) slices. Serve hot with chimi churri sauce.

Outdoor on the barbecue
Grill over hot coals for 6 minutes per side for rare, 8 minutes per side for medium rare, 12 minutes per side for well done.

Indoor
Preheat a ridged cast iron grill pan over high heat. Cook for 6 minutes per side for rare, 8 minutes per side for medium rare, 12 minutes per side for well done.

Makes 4 servings.

Chilli on the Grill BBQ Recipe

For incredible chilli, use pure chilli powder – not the “chilli powder” (a blend of ground chillies, garlic, oregano, and other spices) that you find in most spice racks. The pure stuff is simply ground ancho chillies (dried poblanos).

3 pounds plum tomatoes, cores removed
3 stalks celery
2 medium yellow onions, cut crosswise into 1/2-inch slices
Extra-virgin olive oil
1 medium jalapeño pepper, stem removed
2 tablespoons pure chilli powder, divided
2 teaspoons kosher salt, divided
1/2 teaspoon freshly ground black pepper
1 pound top sirloin steak, about 3/4 inch thick
3 boneless pork loin chops, about 5 ounces each and 3/4 inch thick
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons minced garlic
1/4 teaspoon cayenne
1 bottle (12 ounces) ale
1 cup beef broth
1 can (14 ounces) pinto beans
1 cup grated sharp Cheddar cheese
1 cup sour cream
Grill the tomatoes over Direct Medium heat until the skins are lightly charred on all sides, 8 to 10 minutes, turning as needed. Transfer the tomatoes to a food processor and purée (in batches, if necessary), then pour into a large saucepan.

Brush or spray the celery and onion slices with the olive oil. Grill the celery, onions, and jalapeño over Direct Medium heat until well marked, 8 to 10 minutes, turning once halfway through grilling time. Transfer the vegetables to a cutting board. Chop the celery and onions into 1/4-inch pieces. Mince the jalapeño. Add the vegetables to the tomato purée.

In a small bowl combine 1 tablespoon of the chilli powder, 1 teaspoon of the salt, and the pepper. Season both sides of the steak and the chops with the spices. Brush or spray the meat with the oil and grill over Direct Medium heat for about 8 minutes, turning once halfway through grilling time. Remove from the grill and cut into 3/4-inch cubes, then add to the tomato mixture.

Add the remaining 1 tablespoon chilli powder, remaining 1 teaspoon salt, cumin, oregano, garlic, cayenne, ale, and broth to the meat mixture. Bring to a boil over high heat.

Reduce the heat and simmer, stirring occasionally, until the meat cubes are very tender, 1 to 1-1/2 hours. Add the pinto beans and simmer for 15 minutes more.

Serve warm in individual bowls and top with the cheese and sour cream.

Makes 6 to 8 servings.

Phil’s BBQ recipe – delicious peking-style duck

Tasty barbecued Peking-Style Duck takes a little while to prepare and cook – but the taste is well worth the wait.

This recipe uses an indirect heat source (see our technique video for help with indirect cooking), and results in a moist, flavourful meal that will serve the whole family!

Preparation time: 30 minutes / Cooking time:- about 2-3 hours / Serves: 4

Ingredients

One x 2.25Kg (5lb) duck

Seasoning

salt

freshly milled black pepper

3 tsp five spice powder

2 cloves garlic

1 onion (skin on) halved horizontally

200g ginger, cut into chunks

2 tbsp toasted sesame oil

Method

When you are ready to cook the bird, remove any excess fat – especially from the areas around the neck and the parson’s nose.

Season the inside of the duck with the salt, pepper and five spice powder. Make sure it’s well rubbed in.
Now rub the sesame oil over the bird and massage in well.

Place one half of the onion inside the duck and push in as far as you can, then add the ginger and finally the other half of the onion. Close the cavity by tying the legs together tightly – this well help keep in the onion and ginger inside.

Heat all but one of your barbecue’s burners to 180° C, before placing the duck on the unlit burner. Ideally, use a roasting rack with a drip-tray underneath.

Close the lid and cook for around two and a half hours, checking and turning occassionally. Don’t expect the cooked meat to be crispy – but it will be moist and bursting with delicious flavours.

Serve with… Duck dipping sauce

The ideal accompaniment to Peking-style duck…

Ingredients

200mls mirin

100mls light soy sauce

1 tsp Chinese five spice powder

25g ginger, cut into 2cm very thin strips

3 cloves of garlic crushed

1 tbsp toasted sesame oil

1 tbsp lime juice

10 baby spring onions, cut very thinly

½ tsp very finely chopped red chilli

Method

Combine the mirin, soy, spice, garlic, ginger, sesame oil, and spring onions and boil for just 30 seconds.

Remove from the stove and add the lime juice and stir well.

Serve warm with Peking style duck, as detailed above.
